Ingredients

  • Ginger, 15g, minced

  • Garlic, 1 clove, minced

  • Shallot, 15g minced

  • Gailan stems, 芥籣 100g, sliced

  • Egg whites, 3

  • Spring Onion, 1 stalk, chopped

  • Salt, White pepper

  • Cold rice / Day old rice, 250g

Prep

1. Parboil your Gailan stems, drain and set aside 

2. Beat your egg whites, season with salt & white pepper

Method

1. Heat 1 tsp of oil in your wok, fry ginger until lightly golden brown. Add garlic and shallot over medium heat until fragrant. 

2. Add the gailan stems, followed by the cold rice. Fry together over medium heat for 2 minutes. Then add the egg whites, stir fry quickly. Season with salt and white pepper as needed.

3. Serve with chili oil for a bit of a kick. That’s it! Add extra spring onion for garnish & taste to your liking. ENJOY
