In many Asian kitchens, tofu wasn’t a swap — it was just part of the rotation. In soups, stir-fries, steamed dishes, or even desserts. Sometimes it was the main star, sometimes it was just background.
Seeing tofu only as a substitute misses its true versatility. It takes on flavour, comes in endless textures, and can show up in almost any meal. It’s not trying to mimic meat — it does its own thing, quietly and brilliantly.
What You’ll Need
Here’s everything you need to make this easy, high-protein, skin-supporting breakfast. This recipe makes around 10–12 pancakes.
Ingredients
Silken tofu — 150g
Ripe banana — 1 medium
Gluten-free flour — 170g
Matcha powder — 1–2 tsp
Baking powder — 1 tsp
Plant milk (soy recommended) — 225–250ml
Honey or maple syrup — 1 tbsp
Cinnamon powder (optional) — ½ tsp
Method
Blend all ingredients until smooth. Batter should be thick but pourable.
Let it rest 5–10 minutes to thicken slightly.
Heat a non-stick pan over medium heat with a little oil. Scoop one portion per pancake.
Cook 2–3 minutes until bubbles form, then flip and cook another 1–2 minutes.
Serve with yoghurt, maple syrup, and fresh fruit
