Ingredients
ingredients (Serves 2):
2 boneless, skinless chicken thighs, cut into 1-inch pieces
1/4 kabocha pumpkin, thinly sliced
1/2 tbsp miso paste
1-2 tbsps soy sauce
1 tbsp cornstarch
1 tbsp chinese shaoxing wine
salt, peper and sesame oil to taste
Water for cooking rice
Recipe
1. Add 2 cups rice into your rice cooker and wash your rice three times
2. Slice the pumpkin and set aside
3. Marinate the diced chicken with 1 tbsp shaoxing wine, 1/2 tbsp miso paste, 1 tbsp cornstarch and 1-2 tbsps soy sauce for 15 mins.
4. In the rice cooker, add pumpkin slices, then spread the chicken pieces over the top of the rice.
5. Then add water, amount should be just covering the surface of the rice. Close the lid and click the cook button
6. Once the rice is fully cooked, mix the rice well, garnish with green onions, drizzle with sesame oil. serve while hot. ENJOY!
