Ingredients
Pork Bone Broth:
Pork Shank 豬展 900g
Pork Bones 西施骨 1300g
Water 5L
Secret Ingredient: Tianjin winter preserved vegetables 天津冬菜
Prep
1. Blanch all the pork and bones in a pot of water for 5 minutes and drain
2. Wash the pork and bones under running water, one at a time
Method
1. Get your largest stock pot ready with 5L of water & bring to a boil
2. Add in the blanched pork shank and bones. Keep on highest heat for 10 minutes. After which, simmer for 6 hours, covered.
3. Uncover the pot, turn on the highest heat and bring up to a boil for 25 minutes. Taste test, add a touch salt if necessary.
4. Strain everything, let cool and transfer your soup into container boxes. (Optional: Refrigerate for 1 hour, spoon off the solidified fat before storing in the freezer for extra clear broth).
5. When serving, our family’s secret is to add a few pieces of the Tianjin preserved vegetables for extra umami and flavour.
