Nourishment & Hydration

Ingredients

  • Whole fresh Chicken

  • Pork Bones 西施骨 3100g

  • Fresh Sea coconut 700g

  • Dried Sea coconut 1000g

  • Coconut milk 600ml

  • Carrots, sliced 550g

  • Chinese Red dates, washed & pitted 40g

  • Dried scallops 50g

  • Ginger, sliced 30g

  • Water 4.5-5L

Prep

1. Wash the chicken and use salt to get rid of the poultry smell

2. Wash the pork bones. Blanch both pork and chicken together for 10 minutes, set aside, discard the water

3. Clean the fresh sea coconuts, cut them into 5mm thick slices

4. Wash the dried scallops in cold water, set aside

Method

1. Get your largest stock pot ready with water & bring to a boil. 

2. Add in all the ingredients except carrots and coconut milk. Leave on rapid boil for 10 minutes.

3. Simmer with cover on for 1 hour.

4. Add carrots and simmer for another hour. 

5. Add coconut milk and simmer for one last hour.

6. Season with salt and brown sugar, adjust to taste. Turn on the highest heat setting and rapid boil for 10 minutes uncovered.

7. Turn off the heat, cover the pot and let it steam for 10 minutes.

8. Once it’s ready, strain the chicken, coconuts & carrots into a separate container. You can choose to discard the pork bones, dried coconuts, dates, scallops and ginger. 

9. Shred your chicken once it’s cooled.

10. Transfer your soup into freezer-friendly storage boxes. 

11. Optional: you can keep the soup in the fridge overnight and remove some of the solidified fat the next day. This will be tricky as you do not want to remove the coconut milk solids.

12. Serve the soup hot, plain or with your shredded chicken, sea coconuts and carrots. Enjoy with friends & family!
