Ingredients

Warm Squash Salad:

  • 1 small butternut squash peeled, seeded, cubed or long strips

  • 1/2 tsp sea salt

  • 1/4 tsp chili powder

  • 1/4 tsp chili pepper flakes

  • 1 pinch black pepper

  • 2 1/2 tsp extra-virgin olive oil

  • 2 cups seedless red grapes

  • A bunch of kale

  • 1/4 cup shaved Parmesan

Vinaigrette Ingredients:

  • 1 clove garlic, smashed and minced

  • 1 tbsp sherry vinegar

  • 1 tbsp Dijon mustard

  • 1 tsp honey

  • 1/4 tsp paprika

  • 1 pinch sea salt

  • 1/4 cup extra-virgin olive oil

  • 2 tbsps finely shredded Parmesan

Vinaigrette Recipe

1. First, whisk together all the ingredients (except the olive oil & parmesan) in a bowl. 

2. Then, slowly whisk in the olive oil until emulsified. 

3. Fold in parmesan & set aside.

Salad Recipe

1. Preheat oven to 200° C. Line 2 oven trays with parchment paper or use non-stick mats.

2. Slice the squash into 1/2-inch thick wedges.

3. In a small bowl, combine sea salt, chili powder, chili flakes, and black pepper. Set aside.

4. Toss the squash with 2 tsp olive oil & most of the spice mixture. Arrange the wedges with plenty of room on the tray. Roast for 30-40 minutes, or until squash is tender and edges are lightly browned.

5. Toss grapes with 1/2 tsp olive oil and the remaining spice mixture. Arrange the grapes onto the oven tray. Bake for 8 to 10 minutes total, or just until the grapes start to burst.

6. Toss & massage the kale with half of the Vinaigrette and arrange on a platter. Top with your roasted squash, grapes & shaved Parmesan. Drizzle with with remaining vinaigrette. Serve warm!!!!
