Ingredients

Main Ingredients:

  • Chinese red dates, a handful

  • Goji berries, a handful

  • Chinese Yam (Wai San) 淮山, 30g

  • Dang Shen 党参, 40g

  • Astragulus Root (Bei qi) 北茋, 80g

  • Water, 5L

Optional, for flavour:

  • Dried conch 紅螺頭, 10-20g

  • Pork ribs, 50g (or lean pork/chicken)

  • Ginger, a large thumb

  • Spring onion, large slices

Prep

1. Clean, wash and drain all the TCM ingredientsPut ginger, spring onion & conch in a pot with cold water and bring to a boil.

2. Drain and set aside the conch.

3. Boil and blanch the pork, set aside

Method

1. In your crock pot or soup pot, add ginger to cold water and bring to boil.

2. Add in everything (except goji) on medium heat for 15 minutes, uncovered.

3. Cover and slow simmer on low heat, for 2 hours (throwing in goji in the last 30 minutes)

4. Turn off heat and let it steam for another 30 minutes, covered

5. Season with salt to your liking. That’s it!!
