To finish the last week of fasting with a bang while we’re all getting excited for Raya, I'm sharing this super easy but decadent recipe that’s perfectly indulgent for your Raya open houses & dinner parties.

10 Mejdool Dates
A cup of Kataifi Dough (or any wheat dry cereal e.g rice crispies)
4 tbsp Pistachio Paste
70g Dark Chocolate
Crushed Pistachios
Method
- Gently pull apart the kataifi dough into fine strands.
- In a pan, toast the kataifi until golden brown, adding a touch of butter or oil if desired.
- Arrange the pitted dates in a rectangle on parchment paper and flatten with a rolling pin.
- Mix the toasted kataifi with pistachio butter until evenly combined.
- Spread the pistachio-kataifi mixture over the flattened dates, pressing lightly to adhere.
- Pour the melted dark chocolate over the top, ensuring an even coat.
- Sprinkle crushed pistachios as a finishing touch.
- Freeze for 30 minutes until set.
- Cut into bite-sized squares and enjoy.
